The objective of this study was to prepare roasted and lyophilized tempeh flour with soybean cultivar BRS 267 to apply them in the formulation of coconut biscuits. The cookies produced with whole soy flour and mixed flour of soybean and tempeh were evaluated for proximate composition, fatty acid profile, and isoflavone aglycones in order to verify the effects of inoculation with the fungus Rhizopus oligosporus and those of the drying processes of roasting and lyophilization on the chemical characteristics of the final product. Sensory acceptance and purchase intention of the formulated products were also evaluated. The results indicate the maintenance of linolenic acid, which is important in the prevention of coronary diseases, and an increase in the aglycones levels when the tempeh flour was used. Lipids and proteins showed differences, and the sensory analyses demonstrated similarity between the cookies with satisfactory scores for aroma, flavor, texture, and overall acceptability for both samples. when compared to the control. Purchase intent was also positive for the lyophilized and toasted tempeh flours, thus enabling the use of the roasting process as a simple drying method, for processing tempeh and obtaining a flour rich in proteins and aglycones that can be used as a partial substitute for soy flour in cookies and other bakery products. |

Resumo: O trigo (Triticum aestivum L) constitui uma das principais culturas de importância agrícola para o Brasil. Contudo, a ocorrência de doenças como a brusone, tem limitado a produtividade dessa cultura nas regiões produtoras. Desse modo, o objetivo desse trabalho foi avaliar o potencial de uma linhagem Streptomyces sp. CMAA 1647, uma actinobacteria, no controle biológico de fungos fitopatogênicos, principalmente, Pyricularia grisea, agente causal da brusone. A linhagem modelo deste trabalho, Streptomyces sp. CMAA 1647, foi isolada a partir de solos supressivos à brusone e previamente selecionada por inibir o crescimento do agente causal. O potencial de antagonismo da linhagem CMAA 1647 foi avaliado pela técnica de pareamento direto contra os seguintes fitopatógenos: Phoma caricae papaya , Rhizoctonia solani, Fusarium graminearum, Colletotricum gloeosporioides, Alternaria alternata, Sclerotinia sclerotiorumm, Pyricularia grisea, Phytophthora sojae, Fusarium solani; Bipolaris sorokiniana. Os resultados revelaram que a linhagem CMAA 1647 apresenta potencial antagónico contra 55% dos fungos testados. Adicionalmente, os compostos presentes no extrato bruto produzidos por essa bactéria inibiu o desenvolvimento da P. grisea e B. sorokiniana. Os tratamentos de sementes de trigo com propágulos de Streptomyces sp. CMAA 1647 demonstraram o potencial controle in vitro de patógenos que atacam sementes, assim como apresentaram indícios de mecanismos diretos ou indiretos que auxiliam no processo de germinação e na promoção do crescimento de plantas de trigo. Diante desses resultados, propõe-se que pesquisas sobre formulação sejam desenvolvidas para aumento de produção e controle biológico de patógenos à cultura de trigo utilizando a linhagem modelo como ativo biológico. Abstract: Wheat (Triticum aestivum L is one of the main crops of agricultural importance for Brazil. However, the occurrence of diseases such as blast has limited the productivity of this crop in the producing regions. Thus, the objective of this work was to evaluate the potential of a strain Streptomyces sp. CMAA 1647, an actinobacteria, in the biological control of phytopathogenic fungi, mainly Pyricularia grisea, causal agent of blast. The model strain of this work, Streptomyces sp. CMAA 1647, was isolated from soil suppressive to blast and previously selected for inhibiting the growth of the causative agent. The antagonistic potential of the CMAA 1647 lineage was evaluated by the direct pairing technique against the following phytopathogens : Phoma caricae papaya , Rhizoctonia solani, Fusarium graminearum , Colletotricum gloeosporioides , Alternaria alternata, Sclerotinia sclerotiorumm , Pyricularia grisea , Phytophthora sojae, Fusarium solani, Bipolaris sorokiniana . The results showed that the CMAA 1647 strain has an antagonistic potential against 55% of the fungi tested. In addition, the compounds present in the crude extract produced by this bacterium inhibited the development of P. grisea and B. Sorokiniana. The treatments of wheat seeds with propagules of Streptomyces sp. CMAA 1647 demonstrated the potential in vitro effective control of pathogens that attack seeds, as well as showing direct or indirect mechanisms that aid in the germination process and in the promotion of the growth of wheat plants. In view of these results, it is proposed that research on formulation be developed to increase the production and biological control of pathogens in wheat using the model line as a biological active.
